Ground Beef and Sweet Potato Curry

Ingredients:

  • 1/2 tablespoon coconut or avocado oil
  • 1 pound ground beef, preferably from grass-fed cows
  • 1 medium sweet onion, diced
  • 4 cloves garlic, peeled, minced, and rested
  • 2 tablespoons fresh ginger, minced
  • 2 tablespoons curry powder
  • 1 medium sweet potato, peeled and chopped into bite size cubes
  • 1 can (14 ounces) stewed or diced tomatoes
  • 1 can (14 ounces) unsweetened coconut milk

Directions:

  1. In a large pan over medium heat, warm oil and then add ground beef. Crumble and cook until no longer pink, about 5 minutes.
  2. Add onion, garlic, ginger, and curry, and cook until onion is translucent, about 3 minutes.
  3. Add sweet potato, undrained tomatoes, and coconut milk. Bring to boil, then cover and reduce heat to simmer.
  4. Simmer 15 minutes.
  5. Serve over rice or with naan if desired.
