Blue Cheese Mashed Cauliflower

Ingredients:

  • Florets from 1 head of cauliflower, washed, dried, and cut up into bite-sized pieces
  • 4 cloves garlic, peeled, mashed, and rested
  • 1/2 cup blue cheese
  • 1 teaspoon butter, preferably from grass-fed cows
  • 1/2 teaspoon salt
  • Ground pepper, to taste
  • Parsley for garnish, optional

Directions:

  1. In a steamer basket over boiling water, cook cauliflower and garlic until cauliflower is very tender, about 15 minutes.
  2. Allow cauliflower to cool for a few minutes, and then place it in blender with blue cheese, butter, salt, and pepper.
  3. Pulse until desired consistency.
  4. Serve immediately, with parsley garnish if desired.
